Smooth rib smoke


 
Well, for a change I had an easy, smooth, rib smoke yesterday - sorry, no pics. Instead of putting the meat on when I poured the hot coals on the unlit, I let the WSM come to temp, 225, and then put the meat on. I also duct taped my door at the beginning. Temps went to 240 and stayed there for two hours. I then opened up to foil one of the two racks, [my wife likes them FOTB]. The air blast pushed the heat up, but I closed everything down, and it finally settled in at about 265. Came out great.
