Smoky mashed potatoes


 
I would like to make these potatoes, but before I do, I want to confirm that 3/4 cup Olive Oil is the correct amount. It strikes me as a lot, so I thought I would check first. Thanks!
 
Can I Prepare these Smoky Mashed Potatoes Ahead of Time?

Scrape the onion-evoo mixture into the riced potatoes and add a little of the reserved potato cooking water. Add some white pepper and mix, adding alternating additions of reserved cooking water and plain evoo, a T or two each at a time, till the potatoes are rich and flavorful. Do not overstir or they will become pasty. Serve.

Can I make these ahead of time and hold for a couple hours, say in a Crock-Pot, or will they become pasty -- like from overstirring as mentioned above?
