smoking young chickens

Howdy all,

I went to Sams today and found that they carry adult and young whole chickens. I haven't smoked chicken yet, but I thought it would be a good cheap experiment, so I purchased 4 young chickens in a 12% solution.

Is there anything I should know about smoking young vs adult chickens? Do I need to brine chickens that are "enhanced".

I was also looking for the best lighting method to quickly get the cooking temps to 325-350F. Should I use the standard method or can I use the minion method to get cooking quickly?

You do not need to brine "enhanced" chickens...the 12% solution is the brine.

For cooking at high temps, the standard method is the way to go.

Can't really help you with the young/adult question but I would think there isn't any difference.

Young (smaller) chicken is thought to be more tender then older (larger) chicken though they both can come out great. Smaller will cook faster. Given time I like to brine. I would think if you want to cook at those temps I would go with a more conventinal fire. You will not need to cook all that long so no need for the long burning Minion. Just my .02
