Smoking ribs today to be eaten tomorrow

If I'm going to use the 3-2-1 method, should I do the 3 and the two today and the one tomorrow evening?
It makes sense to me but I'm looking for advice from people who've done it.

When I have done ribs for the next day I cook them about 75-80% done and the next day foil and reheat; finish on the grill with some sauce if desired. The grill seems to recrisp them. We had guests over and they had no idea they were eating leftovers! (Until now...) :)
 
3-2-1 strictly by time may produce overcooked mushy ribs, especially on babybacks. Make sure you pay attention to the texture of the meat. If you can start to pull the bones apart, they're done, even if it's only been 2-1-1 (etc)

Got it. I NEVER go strictly by time, rather it's an equation for the three elements of the process. I could have just as easily said,"should I cook them 3/4 of the way".
