Smoking Mr. Brown Butt on the Performer

So who else is up?...I'm "monitoring" my smoke from 2-3 feet away...ha ha. I'm using a performer rigged with a stoker to smoke. I've done a few Mr. Brown butts on the Performer in the past, but really had some hard times with the temp. I think I nailed it this time though. I've learned a LOT about how to do it here on tvwbb.com. Pics to follow.

I used to use my Performer to smoke, using a Smokinator (Christmas present from my parents)- it took A LOT of babysitting. The first time I smoked a butt with that setup I remember being 15 hours into the cook, running in and out (every hour!) to add water, add coal, adjust vents, watching the clock hit 1AM...and I distinctly remember thinking "I'll never do this again, Mom and Dad wasted their money!". BUT, after letting the butt sit for a couple hrs in a cooler (actually I fell asleep for 2 hours), and then pulling and sampling it....I said to myself "I am SO doing this again" ! I did work on the Performer for another year or so smoking this and that, until I finally purchased a WSM and never looked back! Although for small smokes I still use the Performer. I LOVE the versatility of that grill.

Good luck on your cook today, I'm sure you're going to nail it!

Hi Sheila...I'm about 7 hours in, and getting hungry. This cook is going well (fingers crossed). I have a Stoker auto-temp control though, and it works well IF you arrange the Performer right. Trial and error (more coals, more water, etc.)...ha ha. I think I have it down this time though (no maintenance). I'd love a WSM, but my name isn't Rich.

You need an account on a photo sharing site. It can't be done directly. I seen guys post links from Instagram that's another option.

Hey Beau....I'm only like two hours away from you....do I need to come and take pictures and post to this site for you? Of course if I leave now I would be there when the pork is done. I won't have time to stop and eat somewhere.

I am in Medford and I have big pockets. I might be throwing down some ribs that you might want a share of tomorrow....or....this should be ready in about 4 hours.

Salmon will do...See you in an hour! I still intend to post pics, I just thought it would be easier, and I'm busy as you can see.
