I used to use my Performer to smoke, using a Smokinator (Christmas present from my parents)- it took A LOT of babysitting. The first time I smoked a butt with that setup I remember being 15 hours into the cook, running in and out (every hour!) to add water, add coal, adjust vents, watching the clock hit 1AM...and I distinctly remember thinking "I'll never do this again, Mom and Dad wasted their money!". BUT, after letting the butt sit for a couple hrs in a cooler (actually I fell asleep for 2 hours), and then pulling and sampling it....I said to myself "I am SO doing this again" ! I did work on the Performer for another year or so smoking this and that, until I finally purchased a WSM and never looked back! Although for small smokes I still use the Performer. I LOVE the versatility of that grill.
