Anybody out there have any experience smoking moose meat?  For those of you who haven't seen it, it is EXTREMELY lean.  In fact I have a couple of roasts that have absolutely no fat on them.  Normally I "spike" the roasts with beef fat or bacon. I'd love to hear any stories, successful or not about smoking moose or any other unusually lean meat.
