Smoking in the snow :)

Making some chicken quarters. Question is, now that it started snowing, what's the "right" way to put my 18.5" WSM to bed?

I usually let it cool (vents closed) completely, then dump the drip pan (I keep apple juice or water in it), then put the middle section upside down and cover with vents open

Given that it's snowing outside, I'm wondering if I should keep vents closed and wait to put the cover on until it dries out/freezes... Trying to avoid mold if I can

I would just close the vents and let it cool down till tomorrow and then deal with cleanup.
Done that a bunch and never had any mold. ( I don't cover) but keep my Weby's sheltered.

Thnx! I actually lucked out, snow stopped before I was done cooking, so it was dry and I was able to follow "the usual" process

Btw: for those that have been helping me dial in my WSM: tonight's chicken quarters cook (4 hours @ 225), I used a straight minion method. Loaded up the coals as much as I could, with a handful of applewood chunks. Threw 20 lit coals on top, did the entire cook and (for the first time ever) I have a TON of coal left over... I think i could have gotten 8 hours easy. Think I'm figuring out my mistakes :)
