I want to smoke some salmon for my wife but hate that salmon smell. On the grill, I just crank up the heat afterwards and no smell is left...but what about the WSM? Is there a big fishy smell after smoking fish?

I haven't noticed any after smoking a bunch of king fish. I did put a little extra effort into the cleanup though, particularly the grills. Don't know how the smell would compare to salmon.

I've done Salmon and have noticed a small amount of residual smell. Nothing that tainted the next cook, though.

One of the things I do at the end of a cook is take off the middle section and put the racks directly on top of the coal ring. I'll let it sit like this for about half an hour. Because they are exposed, whatever coals are left will burn hot and do a pretty good job of cleaning the grates. Before I take them off, I'll use a wire brush on them.
