Smoking Brisket in Foiled Pan

Was browsing thru a receipe book by Steven Raichlen - His receipe for brisket calls for smoking it in a foiled pan. Anyone on the forum try this method and if so, what were your results?
 
That is braising and it does work, I know competition cooks using that technique and are doing very well.

I did the rub from that receipe on a brisket and it came out really good. Next time I need to leave it in longer to get it really tender.

FYI, I also used the rub from his Beef rib receipe on Pork spares and they came out great!!!
