i just completed cooking a 21 pounder in 4 1/4 hrs at 325 degrees and in looks great! waiting 20 minutes before carving. Used an apple brine, then a homemade rub - smells great! My wife is making a little Big Bob Gibson's White barb b que sause to try on a piece,
