Smokin in Evanston, Il - and question about finishing sauce for pulled pork

Hi all - I bought my first WSM in December and have finally gotten around to getting on the forum after reading tons. All of my first smokes were in very cold, sometimes snowy weather. Did my first overnight this weekend and enjoyed smoking without really gusty winds! Have had good luck so far with turkey breasts and ribs.
This weekend was my first butt. It turned out pretty well but I noticed that it really dried out between the time we pulled it and when we ate. I think I probably cooked a bit too long, but I've noticed in a lot of recipes that people save drippings and make a "finishing sauce" that they mix in. I was assuming that the bbcue sauce and a little cole slaw on the bun would add enough moisture but I'm curious whether most people do that to just give the pork that extra on its own. Any advice would be appreciated! Got some great pics if I can figure out how to post.

Welcome aboard Eric! What I do with the butts is when I pull them off the smoker
I will double wrap in foil and put in an ice chest with a few towels and let it rest for at least
and hour or two. This allows the juices to redistribute throughout the meat. Any juices from
the foil I will pour back over the pulled pork. That is what works for me and it takes away from

Thanks guys. I'll try adding the juices back in. I also was talking to someone recently and think I let the port sit pulled too long before we ate. It was steaming and dried out. I'll pull closer to the time we're really ready to eat next time. Can't wait to try!
 
How easy did it pull. If it was dry it is possible you didn't cook it quite long enough.Welcome to our addiction.
