Smokefire ex4 smoking session


 
Sounds like an incredible smoking session! That lineup of pork dishes is mouthwatering, especially the smoked sous vide picanha and pickled pork loin. The EX4 clearly still has it! Do you have a favorite from the batch or did they all turn out equally amazing?

the picanha was great - even tough it was well done, it still was juicy 🙂

i've placed a drip pan with warm water on the flavorizer bars and preheated the sf to 110°C. after putting the sous vide picanha (~800g) along with the other meat in, i activated smokeboost for 1h.
after another hour with 110°C wrapped it in butcher-paper and foil (with a shot of beer).
after 2h removed it from sf, let it rest for ~10mins and enjoyed it 🙂

it all turned out delicious 😋 - can't really tell what was my favorite ...my guests also couldn't nominate a favorite one 🙂
