My Dad gave me this recipe and it's fantastic.
Take a one to two pound turkey breast and butterfly it. Remove the rind from 4 oz. of brie. You can pick it up pretty cheap at Sam's or Costco. Slice the brie in four slices and lay the slices on one half of the breast. Lay three to five fresh sprigs of basil on top of the brie. Close the breast and wrap in proscuito ham. Hold the ham on with toothpicks. Smoke at 225 with a good sized chunk of apple and a good sized chunk of cherry for approximately 1 1/2 hours or until the internal temp reaches 165. Let rest for 5 minutes and slice.
Everyone loves it, even me and I don't like brie.
