I've smoked turkey breasts on other smokers but tonight will be my first on the WSM. I was planning on just a foiled water pan but I've heard some people cook poultry without the pan. Any of you who have done this have a suggestion?
I have always used my water pan with foil on it. It helps with temp control, since your not used to the Bullet. I have done alot of turkeys and they come out great. But that is my opinion.
