I don't do this nearly enough because I typically go for a direct cook when doing a cheap TT (cheap = < $5 per LBS)
I knew I need to gear up for this cook (snacks photo)
And it went by the numbers. It was wonderful, and the best thing about smoked TT is the leftovers, reheated in CI skillet. Unfortunately those photos don't exist, the time from skillet to belly was extremely short
Yes, Mr. Blu got a bite or two and he's really "warming up" to the snow
