Smoked Salmon??

I'm helping a freind smoke some salmon on Sunday. She told me she was going to brine it. Can I use the Minion Method for starting the charcoal? I looked in the cooking section and they seem to start out high temps then close down the vents to get to 225. Is there anything else special I should know?

There would be no reason you could not use MM. Many use it exclusively for low/slow because they like regulating the temp on the way up rather than bringing it down into range. The only downside might be that you're using a lot of fuel for a short cook but charcoal is relatively inexpensive and can be recyled, if you desire.

You are fine. It won't take that long either.

Depending on the thickness, I shoot for a bit lower temps than 225.....usually around 210 grate.
 
And I like a drier, textured edge and surface and a moist interior--so I smoke brined salmon ~275. My point: You have leeway. You can hot-smoke low/slow--or at a higher temp.
