I am way late to this post, but the 12 that finished in front of you could not have been far out front with the scores you recieved. Great looking turn in, I would not have been able to score a dish this perfect.
 
Looks great but I agree birch syrup isn't really a Canadian ingredient as least in my neck of the woods. In Ontario and Quebec we are all about the maple tree and I grew up on a property where we tapped our trees each spring and spent the weekends boiling down hundreds of gallons of sap to get a few precious gallons of syrup. I wonder in they are making birch syrup on the west coast...

That said I would walk 20 miles to eat that plate and would give you an 11/10 for presentation.
