Shawn W TVWBB Emerald Member Dec 13, 2008 #3 Almonds are tricky enough, pecans seem more delicate. I'd cold smoke, then a very light toss in oil then bake probably no higher than 325ºF to start. Do a couple test ones on a sheet to get the time down. I would try 'just starting to darken' as a beginning point and go from there.
