Smoked meatloaf...


 
Kevin: I followed this recipe and it turned out great! I used a couple of smoke packs with apple chips, did not have the cherry pellets (on my list to buy), it was a sweet tasting smoke. I used some of the meat mixture and did a stuffed pepper which was very good and did not take as long to cook. I did not fry the meat loaf last night, I think I will fry some for breakfast with an egg.

I cubed some last night, sautéed it, and tossed with leftover beans, green peas, sliced scallion, ricotta and orecchiette pasta last night. Tasty.
 
I may try that tomorrow if there is any left, those leftovers are popular! I did a small rib roast this evening to a perfect medium rare, that should take the pressure off the meat loaf.

Brunch today with the last of the meatloaf: Meatloaf "croûtons" (meatloaf cubed then sautéed till browned and crisp on the outside) over a salad of baby greens, romaine, herbs, diced brown tomato, feta and honey vinegar vinaigrette - with a poached egg:
