Ran across something new (to me) while in L.A.: "Smoked Marlin tacos" at a place called Coni's Seafood.
The marlin (and no idea what subspecies of marlin it may be) is smoked until it flakes like canned tuna, but the flavor is closer to pulled pork. It's then "pulled" with cooked onions/poblanos/tomatoes and put on a tortilla with a very mild white cheese -- tasted like really good supermarket "shredded mozzarella" -- and a slice of avocado.
I have no clue what rub may be going on the marlin, or how long it stays in the smoker or at what temperature. I also have no clue if the veg are cooked down with the smoked marlin or separately.
Anyone have any recipes or suggestions?
