Smoked/Grilled Cornbread?

Howdy,

I am trying to cook exclusively with my WSM for a Fourth of July party on Saturday. So far, I have a brisket, a pork butt and 2 alum containers with beans.

I was curious if anyone has had any luck with cooking cornbread on the WSM? After the meat comes off, I was thinking of opening up the cooker full to see if I could get the temps up for one last 30 minute cook at 350 degrees.

Am I barking up the wrong tree or is there a better way?

Go for it. Bake it in a CI pan. I haven't done it on a WSM but I have done it on my kettle.

You'll need to get it up to a minimum of 400' for a minimum of 45 minutes if you are using a 10" or larger cast iron skillet and using a traditional southern recipe without eggs. I'm talking about heating fat in the skillet before putting the batter in.
I do think you could cook it like a cake at 350' and it will probably be good.
