This was a first time for me cook and these turned out good and tasty.
I’m really happy with the skin texture as well.
I started off with some paper towel/air dried wings.
Rubbed with a modified spg less the salt and added onion powder, granulated garlic, onion and some smoked paprika.
I added the zest from 2 smallish lemons and used 1 large chunk of apple wood for smoke.
I put 2 bags of these wings on my 22 kettle at the same time.
Did a flip after 20 minutes at 500f then 10 later I got the cast iron pan hot with oil and ran a few through to test at about 10 seconds per each side.
I put a couple fried ones and a couple regular ones in a bowl with some blue cheese dressing for the wife to test.
She was shocked kinda ‘cause I blind sided her while she was working then the said to fry all of them.
We are going to a bonfire party shortly and I was asked to bring wings.
I’ve got them in the oven @285 and hope they age well.
