Smoked chickens

I tried to smoke chickens today. I was in doubt if the smoke flavour would do the chickens any good, but it sure did! I used three pieces of apple and a couple of small pieces of oak, and after almost two hours I had some of the most tender, juicy and tastiest chicken I've ever had.

I cooked two three- pound chickens, I cut away the backbone and applied some homemade spice- mix before smoking.
I crisped the skin for a few minutes on my gasser.

It's a pity that I did not discover the WSM many years ago.

I have a picture as well, but I'm sure you have seen something similar a lot of times.

By the way- is it kind of strange to take pictures of the food you make? I mean- "Hello, my name is Geir Widar, I like to take pictures of food".. Sounds like an application to a mental institution.

I thought that the chicken skin would be uneatable, due to the black colour. I tried to crisp the skin on my gasser, and had a huge flareup for some seconds when I shut the vents on the WSM, but the taste was awesome!

I also had to try the meatloaf, with bacon covering, and some ABT's. There was only one left when I returned with my camera. I used Habanaro peppers.
The loaf with cheese and union was juicy, but the one with small corncobs and mushrooms was a bit on the dry side.
