Smoked Cheese Potatoes

Mix Together

1 large bag of frozen shredded hash browns (30 to 32 ounce size)

1 16 ounce jar of sour cream

1 10 ounce can of cream of chicken soup

1 stick of unsalted butter

2 cups of shredded cheddar cheese

about half a yellow onion, minced.

This fills a 9 x 13 inch baking pan

Salt and Pepper to taste and smoke on the top grate of your WSM for about 3 hours.

I can't remember where I found the basics for this recipe but the adjustments you can make are nearly endless. I've experimented with different types of cheddar, salt and pepper, onion or green onion, now, Breakstone has flavored sour cream and I used their jalapeno last time. I usually sprinkle some of my own BBQ rub on the top. I wonder how this would taste with cream of celery or mushroom or tomato? Or different types of cheese? (One caveat, do not use the pre-shredded cheese. It has some type of flour or corn starch on it to prevent clumping and ruins this dish).

I am trying it with shoestring style fries! I stole both yer ideas and have it on the WSM right now! I am searing a prime rib roast also in my oven and then putting it on the wsm until done!
