Source recipe: Alton Brown's Once and Future Beans

Modification for smoker: increase liquid from 4 cups to 6 cups, and smoke uncovered (instead of mostly covered in an oven.)

I don't see any reason why you couldn't substitute any other protein, like some smoked brisket.

Be careful......don't let a layer of grease build up on the beans. You need the evaporation both to reduce the sauce as well as cook the beans.
