We had my sons Baptism dinner at my house this past weekend so I decided to try doing a couple Boston Butts for everyone. I'm very glad that I did, they were very well received by everybody!

The first picture was taken right when I put them on at 6:30am and the second picture was taken at 3pm. I used a combination of Apple and Cherry wood, rubbed them the night before and wrapped them in plastic wrap then rerubbed them again before I put them on.

Gary - I see where it looks like there is Nomex, but there isn't any on there.. Is that something that I need to look into? I actually bought my WSM in late June and had no prior smoking experience.

I'd say you don't need anything, looks like you're doing just fine. Some WSM's come out of round and the Nomex reduces if not eliminates air coming from places other than your draft controls. I have nomex on both mine because one was out of round and I loved the abilty to control the air so I carried on and did both. The bottom section fits snug now with the mid section and I put a piece of gasket on the mid section at the botton of the door just to take up the space. You can investigate the modification but if you're not having any issues I would not be concerned. I would though check out the various mods you can make to improve the operation and usabilty of your smoker. If you're handy they're kinda fun to tinker with. Great Butts!
