Smoke Wood Questions

A couple of novice questions about smoking woods:

1. What does it mean to season wood? Does it simply mean the wood is allowed to dry out over time?

2. I've got quite a large amount of maple wood. I've seen very little mention of its use. What types of meat is it good with?

Seasoned is thought to be a least 6 monthes cut and drying. There are many that will say the for BBQ wood between 6 mos and 2 years is the prime age.
