I know I can't use it for an overnighter, as I am about to do with some pork shoulder, but for a lesser cook like chicken breast or salmon, has anyone tried burning down regular wood and feeding as coals? I know it would be a pain through the tiny access through the door, but I just cut down a hickory tree at the folks house that's been dead for about 2 years, so it's already well seasoned, and well, put it this way, my 16" chainsaw wouldn't get all the way through the trunk! Needless to say, I have a healthy supply to last me as long as the wood holds up, some was already "spongy".
I also have quite a bit of cherry thanks to a neighbor that had a tree cut down by local utility company, right into nice size firewood pieces, just left there in a pile, and they let me have it! Cherry & Persimmon.
Anybody ever tried using Persimmon as a smoke wood?
