Smoke for Saturday (Ribs, ABTs, Thighs, Corn)

It's been awhile since the WSM has been out, so what started as just a couple of thighs quickly turned into more. No need to spend the wood and charcoal on just a couple thighs.

I am doing 2-4 racks of STL ribs, ABTs (first time), 12 thighs, and several ears of corn.

One question on the ABTs as this is my first time. Has anyone wrapped them in pancetta instead of bacon ??

Earlier this summer I grilled some spicy cream cheese stuffed japs wrapped in pancetta, and they were absolutely incredible.

Never done ABTs with pancetta. IMO, I'd put the pancetta inside the ABT. I'm thinking it will dry out too much on the exterior.

Got mixed reviews on the Pancetta. Some loved them, some thought it was too much. The market only had thick cut bacon, so I think that was the main problem. I will try again with thin bacon.

The chicken was the star of the weekend. Marinated for 4 hours in Italian, dry rub, smoked at 300 for 1.5 hours, finished on the grill (was running out of time). Not one person grabbed the BBQ sauce.

Ribs came out good, but are a work in process.

Unfortunately, left the camera sitting on a table, so no pics.
