Smoke Day brisket prepped and waiting.

Decent looking 11 pound brisket from Walmart trimmed up, rubbed down and shoehorned into a 2.5 gallon Ziploc bag until 10:00pm tonight. I had planned on doing Babybacks on the WSM today and then putting the brisket on later for overnight cook but there was rain and thunderstorm chances this morning/afternoon so the babybacks will have to wait until Monday. I will however be doing Mongolian Beef on the 22.5" Performer with my cast iron Weber Wok insert this evening. It's not the WSM but it is a Weber :)

I had to modify plans also do rain last night, so roadside chicken tonight, and an over night pork butt starts in a few hours for dinner tomorrow.

Brisket tomorrow and ribs on Monday sounds good to me.
 
I just barely got the brisket on before Smoke Day ended. I have a lake out back and was enjoying some adult beverages while catfishing. I looked at my phone and it was 11:20pm :ROFLMAO:. Luckily the WSM was prepped so I got it going within 20 minutes. BbqGuru Party Q has kept her steady at 235 grate temp for 9 hours. I guess I should go swap out the batteries. I did hook into one big channel cat after getting the brisket on. He ran into some downed branches and snagged me. I ended up having to cut the line. I'm pretty sure it was the trophy citation I have been hunting for since moving here 3 years ago.
 
I am OK with people having other hobbies besides bbq, but when the other hobbies threaten the Q is where I draw the line. This is only acceptable because you had the WSM set and ready to go! Happy Smoke Day!
