Saw this & because I have knives of different cutting angles thought I'd give it a try.
Have a set of Shun knives I found in a discontinued style for $199 for a 9 piece (7 knife) set.
I have a Japanese fruit & veggies knife all ground @ 16 *
I've a 30 year old set Chicago Cutlery ground @ 20 *
Lots hunting knives ground @ 22 or 24*
Well the Japanese knives were the big problem none of my sharpeners would work & didn't really want to ship off.
The Smith's is a pull through adjustable manual sharpener
Sharpening angle will vary from 14* to 24* in 2 * steps.
Price on the sharpener is about $18-22 delivered, I bought from Amazon for $22 because if I didn't like easier to return.
Sharpener has 3 slots 2 adjustable for Normal blades & a fixed slot for serrated.
One slot for course sharping is carbide & fine is ceramic.
Stones are replaceable.
Well how does it work?
Started with 2 worst blades.
My wife & guests didn't understand Japanese knives were very sharp but BRITTLE
These knives were dull & some knicks,
Some don't like pull through sharpener because it removes a lot of metal NOT a problem with Japanese steel it's so hard that 20 pulls through both course & fine removed minimal steel.
However since you were sharpening at the he same as factory angle it worked!
As sharp as new not quite for paring & fruit knives ( still had nicks ) but pretty good.
Big knives which didn't have nicks are almost factory 8)
