Got the wsm loaded with a shoulder on the bottom rack and a butt on the top. Temp is up to about 230 and waiting for the race to come on. Going to go surf fishing in the morning hope they are done around 11am. I just love that smell when it starts to cook.

I am using a full loan off some mexican mezquite for the first time so I am interested to see what the temp and burn time will be. I usually use kingsford and some wood or part kingsford and part lump.
 
Tasted a little piece on the outside mmmmnnnnn I might have to have some with my grits. Few more hours and it'll be ready.
