Have you tried sliced butt?

I recently cut a smoked butt in half to freeze. So not knowing any better, I defrosted in the frig then sliced the butt in 3/16ths inch slices. Heated them in a cast iron skillet till I got a little color on one side then flipped to warm the other. Butt steak is great with scrambled eggs.

Sliced is O.K.
 
In St Louis most pork butts aare sold "sliced into steaks"

These are usually grilled then boiled or simmered in sauce. That's St Louis barbecue.

I'm convinced it tastes much better sliced.

I take it out of the cooler after the rest period. Wiggle the bone out and wrap it and refrigerate. When I want a sandwich, I slice a bunch as thin as I can, put it on a plate, cover with saran and microwave for a minute or so. Always comes out juicy and very flavorful.
 
The whole muscle may retain more moisture than 'pulled'. I added no moisture to the whole butt-I always add moisture to pulled pork.
