Sliceable Pork Butt ...Bone In?

Hi all,

I want to make a sliceable pork like some of the BBQ restaraunts down here in Florida but most of the pork butts and shoulders they sell have a bladelike bone in them which makes it difficult to slice after cooking.

Should I smoke it with the bone in? Or should I debone it and tie it up with string and then smoke it?

Any suggestions on cooking time? How about slicing the meat when done? Whats best way to slice it?

You can renmove bone before ore after, in your case before make a neater job.
Pull the butt of the cooker when it reaches 180? internal.
Slice against the grain.
