Skirt Jerky!

I am in to the final hours with my BRITU and when I removed them to foil them. The skirt meat was like jerky. I did, however, eat it anyway! How long does it usually take to cook the skirt meat at 230 degrees?

When do ribs I usually put the skirt meat on the bottom grate. It is usually done 3/4 of the way through the cook. Sounds like you may have pulled it a bit too soon?
