So I found a place in NY that sells whole briskets in cryovac. They look like slabs of flat with a thick fat cap.
This place also has pork shoulder, but it's not what I'm used to buying from costco. They're smaller, and shaped like a small ham -- tapering at the end towards what looks to be the shoulder joint. Is this a picnic? Also, they still have the skin on. Can I smoke this?
