I though I would try Steve's stuffed chicken thighs on the poultry board:

I bought some boneless thighs not realizing that they didn't have skin. Any thoughts on how to smoke these stuffed thighs? Should just follow the recipe (2.5 hours @ 250) but baste constantly?
Any help would be appreciated. I plan on cooking these tomorrow.
