Sides - High Heat Brisket

My mom is visiting from out of town and im planning on making a high heat brisket. I typically make mine with this coffee spice rub (see link below) that I have found to be outstanding, and some carmalized onions that I do as an add-on. Will also likely do some baked beans

Anyway, I am wondering if you guys have any suggestions for something else I can throw in the smoker, maybe an appetizer or a side dish to accompany the brisket? Ideally, I would like it to be something I can do while the brisket is cooking as opposed to a whole seperate cook.

I know alot of you will suggest a fatty, but knowing my mom, this probably wont be her thing.

Suggestions? Thanks in advance.

I always like to throw in a foil pouch of sliced potatoes, onions, garlic and carrots with some pats of butter into the smoker during the last hour of cooking. Basically any vegetable in a foil pouch would work.
 
Smoked portbello mushrooms: Use a spoon to scrape out the gills and brush heavily w/ combination of melted butter, olive oil, Greek seasonings, salt, pepper, and squeeze of lemon. Smoke on their backs for 20 minutes or more, until tender. Slice up and serve.
 
Thanks for the suggestions, guys. I think probably any of those would work out great!

Might also try and find a stuffed jalapeno recipe that doesnt include cheese (I dont like cheese lol).
