On my gas ECB I often smoked salmon. The cook ran just about 2 hours. Could anyone please advise how much charcoal I would use in my WSM for such a short cook? Most likely I would be using Kingsford and average smoking time would be right around 2 hours at 250 degrees.
I always use a Weber chimney-full as a base minimum. You have to consider that you don't want your fuel pooping out towards the end, so always use a little more than seems necessary.
I did a salmon about a month ago and going to do another one tomorrow. I'll use about a chimney and a half, but go for a higher temp (300-350) and shoot to be done in less than an hr. You might want to take a look at this site for some info on salmon recipe. I asked Konrad about the short cook time on his recipe and he said to go hot to prevent the fish from drying out. www.teddybearbbq.com
