Shopping for a brisket

I have looked at briskets at a couple walmarts in my area. $1.68 pound. THey were "packers"
i guess. What do you do with that "large" 2-3"
fat on one side of it? Just looked like a "lots" of fat to me.
I have never cooked a brisket, a newbei with the wsm.
I know there is a lot of discussion on the forum and recipes. But i just wonder about the huge chunk of fat.

I get briskets from Wal-Mart every now and then. I also get them from a local wholesaler and they always have that thick fat-cap.
I trim the fat off down to about 1/4 inch or so. I also trim almost all of the fat from between the flat and the point, which nearly seperates the two pieces. There is some really hard fat that I make sure is nearly all gone also.
