Shelf Life Of Wood Chunks

Hey all!

I plan on smoking some wings tomorrow in order to make some stock for gravy, stuffing, etc.

I have two bags of apple and alder chunks from last year. Excuse my ignorance, but do wood chunks have a shelf life? They've been sitting in my garage for the past year, so when I throw them on the smoker will they still be good? I'd hate to have my thanksgiving dinner taste like my garage. Yech!

My friends and I will eat some, and whatever I don't put in the stock pot, I'll send up to the Anchor to see if I can start a new trend!

Murph,
The only thing you need to be careful about is if they have mildew on them. If they do toss them! Other than that they should be fine.
