Self Timer?


 
Just pull it out prior to cooking. You should use a meat thermometer to gauge doneness, so there's no need to leave the pop-up in the bird.
 
You can leave it in or you can pull it out. But as Dennis said, don't rely on it to measure meat doneness. You should use a good quality meat thermometer. If you don't have one, add it to your Christmas list this year.

I also recommend calibrating the thermometer before a big cook using boiling water. I was part way through mine yesterday and it seemed like my ET-73 was reading high. I grabbed a hand held instant reading thermometer and found it read lower so I used it to determine when to take the bird off. I just checked it and my ET-73 using boiling water and found the ET-73 reading about 213 and the hand held about 187. So I finished the turkey about 20 degrees high! It was still pretty good but might have been netter had I taken it off at the right time.
