It says use the WSM, I am using my 22.5. It then says use 9 pounds of charcoal and light one full Weber chimney full and scatter 1/2 chimney unlit on top

questions

is one full chimney 9 pounds?

I usually put 20 pounds - 1 chimney in to do minion method and then put the full chimney of lit i the center but the picture of the lit with the unlit on the top of it, looks like more charcoal.

Hi Jeff,

That recipe was designed for the 18.5" WSM. One full Weber chimney of Kingsford is 6 pounds. The 9 pound measure came from what was a 9 pound bag of Kingsford Charcoal sold at that time. The idea was to keep it real simple for beginners, just buy a 9 pound bag of Kingsford, fill the chimney, light it off, pour the hot coals into the WSM, add the remainder of the bag on top, let it get hot, then away you go with the turkey, not worrying about the cooker temperature, leaving all the vents wide open the whole time.

You can do the same on the 22.5" WSM, but 20 pounds of charcoal might be a waste? You've probably done enough cooking on your WSM to know the right amount to use. Since you've got a thermometer on your WSM, you'll want to run at 325-350*F until you hit 160-165°F in the breast, 170-175°F in the thigh, 2.5 to 3 hours.

Have fun!
Chris
