Second top vent


 
I have a can set aside, painted black and ready to go but I've been cooking indoors the last couple of weekends playing with my Dutch Ovens. The chimney will not compare to a second top vent. Once you open up the second vent the smoker really comes on.
 
Okay vent is on, first cook under belt and here are pictures I promised

Didn't take long No blower here... just bottom three vents open.. it went to 405

Put turkey Breast On

Played with vents and had double check on grate temp Held between 350 - 360 for couple hours

Breast hit 160. The skin was outstanding and the meat was very tender. There was no brine involved.
