Seared salmon, shrimp and angel hair pasta

Dinner in 40 minutes.

San Marzanos from Costco, sliced garlic, evoo and fresh basil for the sauce.

Pineapple soy garlic and red pepper flakes and black pepper on the salmon. 20 minutes countertop marinade.

Shrimps in evoo, and SPG.

All flash seared over hot and direct JD lump.

Looking mighty fine.....
Making a homemade red sauce and getting it thick and stick to the noodle is what I have tried and it's tricky.
The secret is adding pasta water to the sauce and then adding the pasta to the sauce pan when Al dente to then finish the pasta cook in the sauce.

This method is flawless and works every time.

This was 3/4 cup of pasta water into the sauce and then raise the sauce temp to before bubbling.
