Seafood recipe request

Thanks in large part to the information sharing on this site I have been able to build up a nice repertoire of beef, pork and chicken recipes with success. Thanks to all! I am now looking to do the same with a few basic seafood recipes, but haven’t a clue about fish selection, cooking methods, etc. I looked through the past postings, but honestly, when you don’t know, you don’t know, and I don’t know. So when I look I just pass……

I am looking for a couple of basic recipes to get started. Any suggestions?

Have you checked here?

You're in Orlando, so I assume you can get fresh fish? You might start with a basic grilled fish such as tuna, swordfish, shrimp, stripped bass, snapper, etc. I usually cook fish with a minimal amount of seasoning; butter or olive oil, a few herbs, lemon or lime and salt.

What have you eaten that you like? Give the group a few hints as to your preferences and that should get the thread going. I'd start simple and work up to more complex dishes.

One would think one could get really fresh fish around here, and I am sure you can, but outside WholeFoods and one other source I know of (that is on the other side of town), sources for fresh fish are not real obvious. I am not so sure that the local grocery chains are any better then any other location throughout the country.

As for the type of fish, I am open, and looking to do exactly as you suggest. Start simple and go from there. One of my children needs to consume larger quantities of Omega 3's, so I am looking get more fish in to her diet and to satisfy her young palate at the same time.

Not all fish have the same level of omega 3. I think it's the oilier ones that have more. This however may not go over with children, due to the stronger flavor. See this chart for comparison. Fish is always a healthy option and you could compromise with going with a mild fish and supplementing with omega 3 capsules. Wish mine would take to fish!

Here is my recipe for grilled shrimp. Try it sometime.

Ray

Ray’s Grilled Shrimp

1-lb large shrimp

Marinade
2 tbs oil
¼ cup tequila
Juice of 2 limes
½ tsp. ground cumin
1 tsp. chili powder
4 garlic cloves – minced


Ray’s MMHH Sauce (MMHH = Mustard, Mayonnaise, Horseradish, and Honey)
Mix together and chill the following:

5 tsps Grey Poupon mustard
5 tsps mayonnaise
1 tsp prepared horseradish
1 tsp honey


Marinade the shrimp for 1 hour.


Grill shrimp and serve with the sauce.
