SD-Second Cook with 18WSM Question/Suggestion

I am going to do ribs again,(family loves ribs). Last time I was trying to go at it with the 3-2-1 method but after I unfoiled, the ribs were done. They were fall off the bone done. (Maybe more like fell off the bone done.) So I am going to go with a shorter cooking time. My family liked the fall of the bone texture of the last ribs but I would like to put them in after the foil to firm up the bark some. I was thinking of going with a 3-1-1 time frame. Should I think of going shorter? I have 3 racks of Loin Back ribs in the freezer waiting for the 29th. Last cook Temp. ran 235 to 260.

Hey Ed. I know the term fall off the bone signals great ribs, but IMHO, that is a far cry from great ribs.
I like St Louis ribs cut from the whole spare since they are meatier than back ribs, but in your case, its already a done deal with back ribs.
If you run your WSM like I do at 250 degrees, your timing should be on the money. (If your dome reads 265 you should be about 250 pit if you have a probe therm)
Start ribs smoking for two hours. This should impart good smoke and color ribs nicley.
Foil ribs for one hour. I foil mine dry since I feel that adding juices will wash away the flavors. Your call.
Remove from foil for one hour and let bark set back up and get all nice and brown. Glaze them with your fave glaze a time or two before removing to the carving board. I dont rest ribs like I do other larger cuts of meat.
If you decide to do thicker St Louis ribs in the future, try the 3-1-1 method vs the 2-1-1 method just discussed. St Louis are meatier and have a tad more fat to render.

Yup.... 3-2-1 and 2-2-1 are just guide lines. What you have to do is experament with the amount of time in foil (if any) till you get the consistancy you like. Of cours that means you might have to cook ribs at least 1x a week for a couple of weeks, but I'm sure you can "suffer" through that...

I like to experiment with rib cooks!!! If you fail, the results are edible to be sure.
I dont consider my 100 failed rib cooks a failure.....I just consider it 100 ways NOT to cook ribs any longer!
 
I am going to go with 2 smoke 1 foil 1 back on the smoker and see how it is after that. Thanks all. I will post here after they are done. Have to have my smoke day on Sunday, the wife is working Satruday.
