Went to my sister-in-laws for a Christmas visit and they had just got a load of 5 cords of wood. Turns out it's 95% red oak that's been dried for 2years so I grabbed a bunch of logs. I now like my sister-in-law again.
Chris, I've been using white oak for years and would not say it was mild. It's comparable to hickory in intensity of the smoke. A little goes a long way for me. I use it when doing briskets and meats that can handle the strong flavors
