Sauce tips

Hey all,

Seeing a few tips in here about using a clay saucer for your water bowl. Can anyone break it down for me? Have a 18.5" WSM.

In an effort to keep temps low using a minion method, a lot of folks place a clay flower pot saucer in the empty water pan. The idea is it helps control peaks and valleys by absorbing heat when a spike occurs, then when the cooker cools releasing heat. Vent control is still important especially with a new cooker.

Thanks for the quick reply. So is the idea to get one that rests flat across the top or slightly inside the bowl? Well used smoker for a few years now, but will keep the vents in mind!

I place mine down into the bowl. My thought was more support in an effort to eliminate cracking. Not sure if others have a larger one or not.
