Saturdays all night Brisket

Good ole Weber starter cube, hot RO lump, midnight brisket rub. Minion with foiled clay method and 6 chunks of Pecan, put the 7.35 lb chunk on at 10:30 pm.

Got up at 7 am and still sitting at 220 like I told her to, fliped. Checked for tender at 12:15 and it was at 197 and ready.

Got so involved with slicing and seperating the burnt ends forgot to get pics of the plated results, family was starving with plates in hand!

It was soooooo good! Had butter beans and sweet taters to go with it. Still had 1/3 ring o lump left!

I just attempted to bite my computer screen. You're inspiring me to get up and get a brisket going over here.

New place by me opened up and they had RO charcoal. First time I ever saw it around here. Looking forward to using it!
